Veg Manchurian is one of the most loved Indo-Chinese dishes, famous for its crispy vegetable balls coated in a spicy, tangy sauce. Crait Corn Flour plays a key role in binding vegetables and creating a crunchy outer texture when deep-fried. It helps achieve restaurant-style crispiness, making homemade Manchurian taste just like café-style Indo-Chinese food.
In this recipe, we will learn how to make crispy Veg Manchurian using Crait Corn Flour for perfect texture, binding and flavor.

Ingredients for Veg Manchurian
For Manchurian Balls:
- 1 cup finely chopped cabbage
- 1/2 cup grated carrot
- 1/4 cup finely chopped capsicum
- 2 tbsp Corn Flour
- 2 tbsp all-purpose flour (maida)
- 1 tsp Crait Corn Flour (for extra crispiness)
- 1/2 tsp black pepper powder
- Salt to taste
- Oil for deep frying
For Manchurian Sauce:
- 2 tbsp oil
- 1 tbsp chopped garlic
- 1 tbsp chopped ginger
- 2 tbsp soy sauce
- 1 tbsp chili sauce
- 1 tbsp tomato ketchup
- 1/2 cup water or vegetable stock
- 1 tsp Corn Flour (for slurry)
- Spring onions for garnish
Step-by-Step Method
1. Prepare Veg Mixture
Take chopped cabbage, carrot and capsicum in a bowl. Squeeze out excess water to keep the mixture dry, which helps in making crispy Manchurian balls.
2. Make Dough for Balls
Add Corn Flour, all-purpose flour, salt and pepper to the vegetables. Mix well until everything binds together. If needed, sprinkle a little water, but keep mixture firm.
3. Shape & Coat
Form small round balls. For extra crunch, lightly coat with 1 tsp Crait Corn Flour. This helps create a crispy outer layer during frying.
4. Deep Fry
Heat oil and fry Manchurian balls on medium flame until golden brown and crispy. Remove and keep aside.
Prepare Manchurian Sauce
5. Make Base Sauce
Heat oil in a pan. Add garlic and ginger and sauté until aromatic.
6. Add Sauces
Add soy sauce, chili sauce and ketchup. Mix well and cook for 1–2 minutes.
7. Thicken Sauce
Mix 1 tsp Corn Flour in water to make slurry. Add it to the sauce while stirring continuously to get smooth, glossy texture.
8. Combine Balls
Add fried Manchurian balls into the sauce and mix gently so they are fully coated.
