At craitworld, we celebrate authentic Indian recipes that are both nutritious and easy to prepare. Moreover, muthiya is perfect for breakfast, evening snacks, festive occasions, and family gatherings.
Unlike many fried snacks, Gujarati muthiya is steamed and lightly tempered, making it a healthier choice. Furthermore, the Gujarati Muthiya Recipe delivers a soft texture and rich flavors while using simple pantry ingredients. As a result, it remains one of the most loved snacks in Gujarati households.
The secret to achieving soft and fluffy muthiya lies in using Crait Baking Soda. Its premium quality provides gentle aeration, improves texture, and helps the dough remain tender after steaming. Additionally, it ensures consistent results in a variety of traditional Indian recipes.
Whether served with green chutney, yogurt, or masala tea, this Gujarati Muthiya Recipe offers comfort and authentic flavors in every bite. Finally, it combines traditional cooking methods with the convenience of modern ingredients.

Ingredients
For the Dough
- 1 cup whole wheat flour
- ½ cup gram flour (besan)
- 1 tsp Crait Baking Soda
- 1 cup grated bottle gourd (lauki) or fenugreek leaves
- 2 tbsp yogurt
- 1 tsp ginger-green chilli paste
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp cumin seeds
- 1 tsp sugar
- 1 tbsp lemon juice
- 2 tbsp oil
- Salt to taste
For Tempering
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 10 curry leaves
- 2 green chillies, slit
- 2 tbsp chopped coriander leaves
- 2 tbsp grated coconut
Step-by-Step Method
1. Prepare the Vegetable Mixture
Grate the bottle gourd and squeeze out excess moisture. Alternatively, if using fresh fenugreek leaves, wash and chop them finely.
2. Mix the Dry Ingredients
In a large bowl, combine whole wheat flour, gram flour, turmeric powder, chilli powder, coriander powder, cumin seeds, sugar, and salt.
3. Add Crait Baking Soda
Mix Crait Baking Soda evenly into the flour mixture. Consequently, the Gujarati Muthiya Recipe develops a soft and fluffy texture after steaming.
4. Prepare the Dough
Add yogurt, lemon juice, oil, ginger-green chilli paste, and the prepared vegetables. Knead everything into a soft dough without adding extra water whenever possible.
5. Shape the Muthiya
Grease your palms with oil and shape the dough into cylindrical logs of equal thickness.
6. Steam the Gujarati Muthiya
Place the logs in a steamer and cook for 20–25 minutes until fully cooked. Afterwards, insert a toothpick to confirm doneness.
7. Cool and Slice
Allow the steamed logs to cool slightly before cutting them into bite-sized pieces.
8. Prepare the Tempering
Heat oil in a pan and add mustard seeds, sesame seeds, curry leaves, and slit green chillies. Meanwhile, allow the seeds to crackle completely.
9. Toss the Muthiya
Add the sliced muthiya pieces and gently sauté them for three to four minutes. As a result, they absorb the flavors of the tempering beautifully.
10. Garnish and Serve
Finally, garnish with fresh coriander leaves and grated coconut before serving hot.
