Dhokla Recipe
Dhokla is one of the most popular traditional Indian snacks, especially from Gujarati cuisine. It is known for its soft, spongy texture, light taste, and healthy steamed preparation. The secret behind perfectly fluffy dhokla lies in proper fermentation and the right leavening agent like Baking soda.
Crait Cooking / Baking Soda helps the batter rise quickly, making dhokla extra soft, airy, and spongy. It ensures perfect texture when steaming and gives restaurant-style results at home. In this recipe, we will make soft and fluffy Dhokla using Crait Cooking / Baking Soda for perfect rise and texture.

Ingredients for Dhokla
For Batter:
- 1 cup gram flour (besan)
- 1 tbsp semolina (optional for texture)
- 1 tsp ginger paste
- 1–2 green chilies (finely chopped)
- 1 tbsp lemon juice
- 1 tsp sugar
- Salt to taste
- 1 cup water (as needed)
- 1/2 tsp Baking soda
- 1 tsp Crait Cooking / Baking Soda (for extra fluffiness)
For Tempering:
- 2 tbsp oil
- 1 tsp mustard seeds
- Curry leaves
- 2–3 green chilies (slit)
- 1 tbsp sugar
- 1/2 cup water
Step-by-Step Method
1. Prepare Dhokla Batter
In a mixing bowl, add gram flour, semolina, salt, sugar, lemon juice, ginger paste and green chilies. Add water slowly and mix until smooth batter forms without lumps.
2. Add Crait Baking Soda
Just before steaming, add 1/2 tsp Baking soda and 1 tsp Crait Cooking / Baking Soda. Mix gently. You will notice the batter becoming light and airy—this is the key to soft dhokla.
3. Steam the Dhokla
Grease a steaming plate and pour batter into it. Steam for 15–20 minutes on medium flame until fully cooked and spongy.
4. Prepare Tempering
Heat oil in a pan. Add mustard seeds, curry leaves and green chilies. Add sugar and water, let it boil for 1–2 minutes.
5. Final Touch
Pour tempering evenly over steamed dhokla. Let it absorb flavors for 5–10 minutes.
